Nowadays probiotic delivery has been widely associated with different foods (especially dairy). However, most of the commonly used probiotic bacteria do not survive stomach acid environment unless incorporated into specific encapsulating materials that can protect them during food storage and gastrointestinal transit - the process which negatively effects a probiotic cost-effectiveness.
Selection of the adequate gastro-resistant and shelf stable probiotic strain, such as Turval B0399, and selection of the adequate food system to deliver the probiotics, are two vital factors to be considered when developing functional, probiotic food products.
